Ingredients

  • 3 cups frozen pineapple chunks
  • ½ cup coconut water
  • ½ cup orange juice
  • ¼ cup lime juice
  • 2 tablespoon sugar
  • 6-8 mint leaves
  • 2 tablespoon coconut cream
  • 1-2 cups ice see notes

  1. Prep the Ingredients: If using fresh pineapple, cut it into chunks and set aside 3 cups. Then squeeze the orange and lime juice.
  2. Blend: In a high-speed blender, combine the pineapple chunks, coconut water, orange juice, lime juice, sugar, mint leaves, and coconut cream.
  3. Adjust Consistency: Blend until smooth. Then add the ice cubes and blend again until you reach the desired slushie texture. See notes about how much ice to use.
  4. Serve: Pour the slushie into glasses. Garnish with a sprig of mint and a fresh pineapple wedge for an extra tropical touch.

Notes

  • ICE: If you’re using fresh pineapple instead of frozen, add two full cups of ice. If you use frozen pineapple, start with 1 cup of ice and adjust based on your preferred consistency.
