Funfetti Cookies
Funfetti Cookies are colorful, festive treats made by mixing cake mix dough with rainbow nonpareils, then baking into thin, soft cookies. The dough is prepared using a box of Funfetti cake mix with added baking powder, eggs, vegetable oil, and vanilla extract. Rolling the dough balls in nonpareils adds extra bright color and a slight crunch on the outside, while the pressing shape creates thin, tender cookies.
Ingredients
- 1 box Funfetti Cake Mix 15.25 ounces
- 1 teaspoon baking powder
- 2 egg
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract pure
- 3 ounces nonpareils rainbow
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a large bowl, whisk together the cake mix and baking powder. With an electric mixer, mix in the eggs one at a time. Mix in the vegetable oil and vanilla extract until well combined.
- Roll dough into 1-inch balls. Roll each ball in the nonpareils. Place 2 inches apart on the prepared cookie sheet.
- Use the bottom of a jar or glass to press each cookie to ¼ inch thick. Bake for 7-8 minutes. Allow to cool on the baking sheet before removing to a cooling rack to cool completely.
