Funfetti Cookies
Description
These Funfetti Cookies use Funfetti cake mix as a base, which gives them a sweet, vanilla cake flavor and a soft texture. Baking powder is included to help them rise slightly. After mixing, the dough is shaped into balls and coated in rainbow nonpareils for colorful decoration and added texture. Pressing the dough balls flat before baking creates thin cookies that bake quickly and evenly.
Baked at 350°F for 7-8 minutes, the cookies become tender with a soft center and colorful edges. Cooling on the baking sheet first helps them set without breaking. They work well as festive treats for celebrations or anytime a colorful cookie is desired.
Ingredients
- 1 box Funfetti Cake Mix 15.25 ounces
- 1 teaspoon baking powder
- 2 egg
- ⅓ cup vegetable oil
- 1 teaspoon vanilla extract pure
- 3 ounces nonpareils rainbow
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- In a large bowl, whisk together the cake mix and baking powder. With an electric mixer, mix in the eggs one at a time. Mix in the vegetable oil and vanilla extract until well combined.
- Roll dough into 1-inch balls. Roll each ball in the nonpareils. Place 2 inches apart on the prepared cookie sheet.
- Use the bottom of a jar or glass to press each cookie to ¼ inch thick. Bake for 7-8 minutes. Allow to cool on the baking sheet before removing to a cooling rack to cool completely.
