Furr’s Lime Jello Salad

Ingredients
- 6 ounces lime gelatin 2 small boxes, Jello
- 2 cups water boiling
- 1 cup water cold
- 20 ounces pineapple drained, canned, crushed
- 16 ounces cottage cheese small curd
- 8 ounces whipped topping Cool Whip brand
- 1/4 cup pecan finely chopped
Instructions
- Place the lime gelatin in a large mixing bowl.
- Add 2 cups of boiling water and stir until the gelatin is dissolved.
- Add 1 cup cold water into mixture and stir to combine.
- Add drained crushed pineapple, cottage cheese, and Cool Whip whipped topping.
- Stir mixture until the mixture is smooth and blended. There should be no large lumps of the whipped topping.
- Pour the mixture into a 9 x 13-inch pan.
- Sprinkle chopped pecans on top.
- Refrigerate until set.
Notes
- Dissolve gelatin completely in warm water to prevent grainy texture in the salad.
- Gently fold in the whipped topping to keep the mixture light and airy.
- Chill for at least 4 hours; overnight refrigeration enhances flavor melding and texture.
