Ingredients

  • 500 g carrots Peeled and sliced
  • 200 g Fresh Methi Fenugreek Leaves, washed and chopped
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder
  • 1 tsp coriander powder
  • salt
  • 2 tbsp Coriander Fresh, chopped for garnish

Instructions

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the cumin seeds and mustard seeds. Let them splutter.
  3. Add the sliced carrots and sauté for 5 minutes until they start to soften.
  4. Add the chopped fresh methi and continue to sauté for another 5 minutes until they wilt.
  5. Stir in the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2-3 minutes, allowing the spices to blend.
  6. Cover the pan and let the Gajar Methi cook for an additional 5-7 minutes, stirring occasionally, until the carrots are tender.
  7. Garnish with fresh coriander leaves.
  8. Serve hot as a side dish with roti or rice.
