Garbanzo Beans Croquettes
Garbanzo Beans Croquettes are pan-fried patties made from mashed garbanzo beans combined with onion, egg, gruyere cheese, parsley, and garlic, bound with breadcrumbs for texture. Served with a fresh tahini sauce, these croquettes have a crisp exterior and a savory, creamy interior, ideal as a snack or appetizer.
Ingredients
- 16 ounces garbanzo beans
- ⅓ cup yellow onion finely chopped
- 1 egg
- ¾ cup gruyere cheese grated
- 4 tablespoons parsley chopped
- 1 garlic minced, clove
- 1 tablespoon olive oil
- ½ cup breadcrumbs
- 2 tablespoons olive oil
- salt to taste
- black pepper to taste
TAHINI SAUCE
- 2 tablespoons Italian parsley finely chopped
- 2 tablespoons tahini sauce
- 2 tablespoons water hot
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 garlic minced, clove
- black pepper to taste
- salt to taste
Instructions
- In the bowl of a food processor mix the garbanzo beans, onions, egg, gruyere cheese, oregano, garlic and 1 tablespoon olive oil. Mix until you reach a thick paste. Transfer to a bowl and add the breadcrumbs. Season with salt and pepper and let it rest for 10 minutes.
- Meanwhile prepare the tahini sauce by adding all the ingredients in a bowl and season to desired taste.
- Slightly wet your hands and grab one spoonful of the garbanzo mix. Roll it and then slightly flatten. You can also use an ice cream scooper, roll and flatten.
- In a large skillet heat, add the remaining 2 tablespoons olive oil and fry the croquettes 2 minutes approximately on each side. Transfer to a paper towel to drain any oil excess.
- Serve the croquettes with the sauce.
