Garbanzo Beans Croquettes are pan-fried patties made from mashed garbanzo beans combined with onion, egg, gruyere cheese, parsley, and garlic, bound with breadcrumbs for texture. Description

Garbanzo Beans Croquettes start with cooked garbanzo beans processed into a thick paste with finely chopped onions, egg, grated gruyere cheese, chopped parsley, and minced garlic, all dressed with olive oil and seasoned with salt and black pepper. Breadcrumbs are folded in to give body and aid in forming patties. The mixture is rested briefly before shaping into small flattened croquettes.

The croquettes are pan-fried in olive oil until golden brown on both sides, creating a crispy outside layer while retaining a tender and flavorful inside from the garbanzo and cheese blend. The accompanying tahini sauce, made with tahini, Italian parsley, garlic, lemon juice, olive oil, and hot water, adds a creamy and tangy contrast that complements the croquettes well.

This dish works well as an appetizer, light meal, or protein-rich snack. The interplay of the nutty garbanzo beans with cheese and herbs paired with the bright, citrusy tahini sauce makes it versatile and satisfying.

Ingredients

  • 16 ounces garbanzo beans
  • cup yellow onion finely chopped
  • 1 egg
  • ¾ cup gruyere cheese grated
  • 4 tablespoons parsley chopped
  • 1 garlic minced, clove
  • 1 tablespoon olive oil
  • ½ cup breadcrumbs
  • 2 tablespoons olive oil
  • salt to taste
  • black pepper to taste

TAHINI SAUCE

  • 2 tablespoons Italian parsley finely chopped
  • 2 tablespoons tahini sauce
  • 2 tablespoons water hot
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic minced, clove
  • salt to taste
  • black pepper to taste

Instructions

  1. In the bowl of a food processor mix the garbanzo beans, onions, egg, gruyere cheese, oregano, garlic and 1 tablespoon olive oil. Mix until you reach a thick paste. Transfer to a bowl and add the breadcrumbs. Season with salt and pepper and let it rest for 10 minutes.
  2. Meanwhile prepare the tahini sauce by adding all the ingredients in a bowl and season to desired taste. 
  3. Slightly wet your hands and grab one spoonful of the garbanzo mix. Roll it and then slightly flatten. You can also use an ice cream scooper, roll and flatten.
  4. In a large skillet heat, add the remaining 2 tablespoons olive oil and fry the croquettes 2 minutes approximately on each side. Transfer to a paper towel to drain any oil excess. 
  5. Serve the croquettes with the sauce.
