Garlic Butter and Burst Tomato Spaghetti with Fresh Herbs

Ingredients

  • 4 oz spaghetti (reserve 1/4 cup of pasta cooking water before draining)
  • 3 tbsp butter
  • 1 pint grape tomatoes
  • red pepper flakes pinch, crushed, or more if desired
  • 3 garlic cloves, minced
  • salt sea salt and freshly cracked, to taste
  • black pepper sea salt and freshly cracked, to taste
  • 1 tbsp parsley fresh, chopped
  • 1 tbsp basil fresh, chopped
  • Parmesan Cheese freshly grated, to taste

Instructions

  1. Cook the spaghetti in a large pot of salted boiling water per package instructions; drain pasta making sure to reserve 1/4 cup of the cooking water.
  2. Meanwhile, heat the butter in a large skillet over medium-high heat. 
  3. Add the tomatoes and crushed red pepper flakes and cook, stirring often, until tomatoes are nearly ready to burst, about 5-6 minutes. 
  4. Add the minced garlic and cook, stirring constantly, for 1 minute. Turn off the heat.
  5. Add the drained spaghetti to the skillet along with some of the reserved pasta water, as needed. 
  6. Add the fresh parsley & basil then season well with sea salt and freshly cracked pepper, to taste; toss until evenly coated. 
  7. Pour into a serving bowl and serve with lots of freshly grated Parmesan on the side. Serve immediately. Enjoy.
