Ingredients

Potatoes
  • 1 tablespoon olive oil
  • 1 tablespoons butter unsalted
  • 1 pound Yukon Gold potato sliced about 1/2 inch in thickness
  • 3 garlic minced, cloves
  • 1 teaspoon thyme chopped
  • 1 teaspoon rosemary chopped
  • 1 teaspoon oregano chopped
Steak
  • 1 ¼ pound sirloin steak cut into 1 inch cubes
  • 1 tablespoon butter unsalted
  • black pepper
  • salt

Instructions

  1. Heat a large cast iron skillet over medium-high heat and add 1 tablespoon olive oil and 1 tablespoons unsalted butter 1 pound Yukon gold potatoes,3 garlic cloves, 1 teaspoon thyme, 1 teaspoon rosemary, and 1 teaspoon oregano, Cook for about 3 minutes, stir, and cook for an additional 3 minutes until fork tender. Remove and set aside on a plate.
  2. Turn the skillet to high heat. Add 1 tablespoon unsalted butter and 1 ¼ pound sirloin steak bites. Let the steak sear for a minute, and then continue to stir the steak until they are golden brown.
  3. Top the steak with salt and pepper and optional fresh chopped herbs.

Notes

  • Use Yukon Gold potatoes sliced evenly about ½ inch thick for consistent cooking.
  • Cook potatoes until fork tender before adding steak to ensure even doneness.
  • Season steak bites with salt, pepper, and optional fresh herbs just after searing for fresh flavor.
