Garlic Butter Shrimp

Shrimp is tossed in a garlic butter sauce and cooked until juicy and tender!

Ingredients

  • 1 tablespoon olive oil
  • 1 ½ pounds large shrimp peeled and deveined
  • 1 teaspoon lemon zest
  • salt and pepper to taste
  • 3 tablespoons butter softened
  • 2 cloves garlic minced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley
  • Lemon wedges for serving

Instructions

  1. Toss shrimp with lemon zest and salt & pepper to taste.
  2. In a small bowl, combine butter, garlic and 1 tablespoon of lemon juice.
  3. Heat olive oil in a skillet over medium-high heat, add shrimp and cook 1 minute.
  4. Flip over, add butter and cook 2-3 minutes more or just until cooked through.
  5. Remove pan from heat and sprinkle with parsley.
  6. Serve with lemon wedges.

Notes

  • Be sure to prepare all of your ingredients before you start cooking as this recipe comes together fast!
  • Do not overcook shrimp.
  • Option: add some heavy cream with the butter to create a creamy sauce.
  • If adding veggies to make this a complete meal, ensure your veggies are pre-cooked, roasted or steamed.
