Ingredients

  • 1/2 cup unsalted butter
  • 4 cloves garlic , minced
  • 1 cup bread crumbs
  • 2 cups cheddar cheese , shredded
  • 1 cup Parmesan Cheese , shredded
  • 1 tablespoon parsley , minced
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 4 chicken breasts , butterflied into 2 thin cutlets
  • 1/4 cup flour

Instructions

  1. Preheat oven to 350 degrees and grease a baking sheet.
  2. Add butter and garlic to a small saucepan on medium-low heat and cook for 3 minutes.
  3. In a large bowl mix together the breadcrumbs, cheddar cheese, parmesan cheese, parsley, salt, and pepper.
  4. Add the flour to a flat plate.
  5. Dip the chicken into the flour on both sides, then into the butter mixture, and finally into the cheese and breadcrumb mixture.
  6. Place onto the greased baking sheet.
  7. Top with any remaining butter (if you have any).
  8. Bake for 30-40 minutes until crust has browned.
