Garlic Noodles

Garlic Noodles feature cooked egg noodles tossed in a rich garlic sauce made from butter, soy sauce, fish sauce, brown sugar, and Parmesan cheese. Ingredients

  • 12 ounces egg noodles spaghetti is fine, Chinese style
garlic-sauce
  • 3 ½ tablespoons butter unsalted
  • 3 garlic cloves, minced
  • ¼ cup soy sauce low sodium
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • ½ cup Parmesan Cheese grated
  • white pepper pinch, optional
  • 2 green onion thinly sliced on a bias, divided

Instructions

  1. Fill a large pot with water, place over high heat and bring to a boil. Add noodles and boil until soft, 6 to 8 minutes, stirring occasionally. Strain noodles into a colander and rinse under cool water. Set aside.
  2. Place a large skillet or wok over medium-high heat and melt butter. Add garlic and saute for 30 seconds. Add soy sauce, fish sauce and brown sugar and cook together until sugar dissolves and mixture is boiling, 2 to 3 minutes.
  3. Raise heat to high, add noodles and toss together for 1 minute.
  4. Remove from heat and sprinkle Parmesan, 1 sliced green onion and white pepper (if using) over noodles and continue to toss together until noodles are evenly coated in sauce.
  5. Top garlic noodles with more green onions and serve.

Notes

  • Spaghetti can replace Chinese-style egg noodles if unavailable.
  • If fish sauce is missing, substitute by doubling soy sauce or mixing soy sauce with rice, white, or cider vinegar plus a pinch of salt.
  • This dish can be prepared up to two days in advance; reheat by tossing in a skillet with a small amount of water to prevent sticking and restore texture.
