Garlic Noodles
Description
The recipe begins by boiling egg noodles until tender, then rinsing them under cool water to stop cooking and separate the strands. A sauce is prepared in a skillet by melting butter and sautéing minced garlic briefly, then adding soy sauce, fish sauce, and brown sugar, cooked until the sugar dissolves and the mixture simmers. The drained noodles are tossed in this sauce over high heat to coat evenly.
After removing from heat, grated Parmesan cheese, sliced green onions, and optional white pepper are mixed in to enrich the flavor and add brightness. The green onions on top provide a fresh contrast to the umami-rich sauce coating the noodles, which have a soft yet firm texture.
Garlic Noodles serve well as a main or side dish and can be enjoyed on their own or alongside grilled meats or vegetables. They can be made ahead and reheated gently with a bit of water to restore their texture.
If you cannot find Chinese egg noodles, spaghetti is a suitable substitute, and fish sauce can be replaced with additional soy sauce or a soy sauce-vinegar mix for similar depth.
Ingredients
- 12 ounces egg noodles spaghetti is fine, Chinese style
garlic-sauce
- 3 ½ tablespoons butter unsalted
- 3 garlic cloves, minced
- ¼ cup soy sauce low sodium
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- ½ cup Parmesan Cheese grated
- white pepper pinch, optional
- 2 green onion thinly sliced on a bias, divided
Instructions
- Fill a large pot with water, place over high heat and bring to a boil. Add noodles and boil until soft, 6 to 8 minutes, stirring occasionally. Strain noodles into a colander and rinse under cool water. Set aside.
- Place a large skillet or wok over medium-high heat and melt butter. Add garlic and saute for 30 seconds. Add soy sauce, fish sauce and brown sugar and cook together until sugar dissolves and mixture is boiling, 2 to 3 minutes.
- Raise heat to high, add noodles and toss together for 1 minute.
- Remove from heat and sprinkle Parmesan, 1 sliced green onion and white pepper (if using) over noodles and continue to toss together until noodles are evenly coated in sauce.
- Top garlic noodles with more green onions and serve.
Notes
- Spaghetti can replace Chinese-style egg noodles if unavailable.
- If fish sauce is missing, substitute by doubling soy sauce or mixing soy sauce with rice, white, or cider vinegar plus a pinch of salt.
- This dish can be prepared up to two days in advance; reheat by tossing in a skillet with a small amount of water to prevent sticking and restore texture.
