GARLIC PARMESAN CHICKEN AND POTATOES

Ingredients

  • 4 boneless skinless chicken breasts
  • 4 medium potatoes diced
  • 4 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • Fresh parsley for garnish

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together olive oil, garlic, Parmesan cheese, oregano, thyme, salt, pepper, and paprika.
  3. Toss the diced potatoes in half of the garlic Parmesan mixture until evenly coated.
  4. Place the seasoned potatoes on the baking sheet and bake for 15 minutes.
  5. Meanwhile, coat the chicken breasts with the remaining garlic Parmesan mixture.
  6. After 15 minutes, remove the potatoes from the oven and push them to the sides of the baking sheet.
  7. Place the chicken breasts in the center of the baking sheet.
  8. Continue to bake for another 25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and potatoes are tender.
  9. Garnish with fresh parsley and serve immediately.

Notes

  • You can use bone-in chicken for extra flavor, but adjust the cooking time accordingly.
  • For crispy chicken skin, broil the chicken for 2-3 minutes at the end of baking.
  • Swap out the potatoes for sweet potatoes for a different twist.
  • For a lighter version, use skinless chicken thighs instead of breasts.
  • The garlic Parmesan mixture can be made ahead and stored in the fridge for up to 2 days.
