Ingredients
- 4 boneless skinless chicken breasts
- 4 medium potatoes diced
- 4 cloves garlic minced
- 1 cup grated Parmesan cheese
- 2 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a bowl, mix together olive oil, garlic, Parmesan cheese, oregano, thyme, salt, pepper, and paprika.
- Toss the diced potatoes in half of the garlic Parmesan mixture until evenly coated.
- Place the seasoned potatoes on the baking sheet and bake for 15 minutes.
- Meanwhile, coat the chicken breasts with the remaining garlic Parmesan mixture.
- After 15 minutes, remove the potatoes from the oven and push them to the sides of the baking sheet.
- Place the chicken breasts in the center of the baking sheet.
- Continue to bake for another 25 minutes, or until the chicken is cooked through (internal temperature of 165°F/74°C) and potatoes are tender.
- Garnish with fresh parsley and serve immediately.
