Ingredients

  • 4 large russet potatoes, washed and cut into wedges
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

    Cup of Yum
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. In a large bowl, combine the potato wedges, olive oil, minced garlic, garlic powder, paprika, dried oregano, salt, and black pepper. Toss to coat the potatoes evenly with the seasoning mixture.
  3. Arrange the potato wedges in a single layer on the prepared baking sheet, ensuring they are not overlapping.
  4. Sprinkle half of the grated Parmesan cheese over the potato wedges.
  5. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy. Turn the wedges halfway through the cooking time for even browning.
  6. Remove the potatoes from the oven and sprinkle the remaining Parmesan cheese over them while they are still hot.
  7. Garnish with chopped fresh parsley and serve hot.
