Ingredients
- 12 oz. (350g) carrot skin peeled
- 2 tablespoons salted butter melted
- 2 cloves garlic minced
- 3 tablespoons grated Parmesan cheese
- 1 teaspoon chopped parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Mix the melted butter and garlic together. Coat the carrots evenly with the garlic butter mixture.
- Arrange the carrots on a baking sheet lined with parchment paper. Drizzle the remaining garlic butter mixture over the carrots. Roast for 15 minutes, then sprinkle the Parmesan cheese on top.
- Roast for an additional 10 minutes, or until the cheese melts and is slightly browned. Remove from the oven and top with parsley. Serve immediately.
