Garlic Roasted Bok Choy

Ingredients

  • 1 bunch bok choy
  • 2 tablespoons sesame oil
  • 4 cloves garlic minced
  • 1 tablespoon soy sauce or coconut aminos

Instructions

  1. Preheat oven to 400° F and grease a baking sheet with cooking spray or line with parchment paper.
  2. Rinse the bok choy, trim off the stems at the bottom, pat dry with a paper towel then slice the stalks in half or in quarters.
  3. In a small bowl, add the soy sauce, sesame oil and garlic and blend together.
  4. Place bok choy pieces on the baking sheet in a single layer and brush the oil mixture onto each piece.
  5. Bake for 10-15 minutes depending on the size boy choy you have.
  6. Transfer to a plate and drizzle with additional soy sauce, salt and pepper and add toasted sesame seeds if desired.

Notes

  • Add a little spice like red pepper flakes.
  • Add grated fresh ginger or ginger paste.
  • Add a ½ teaspoon rice vinegar or lemon juice to the mixture for added flavor.
  • Add other vegetables to the baking sheet, such as sliced bell peppers, mushrooms, snow peas or carrots.
