Gary Cooper's Buttermilk Griddle Cakes

Ingredients

  • 1 cup buttermilk
  • 1/2 cup sweet cream
  • 1 large egg, well beaten
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoons butter, melted
  • 2 tablespoons cornmeal
  • 2 cups flour
  • Butter and maple syrup for topping

Instructions

    Cup of Yum
  1. Mix ingredients in order given (excluding topping butter and maple syrup) to make a thick batter.
  2. Drop by spoonfuls on a greased hot griddle.
  3. Cook on one side and when puffed, full of bubbles and well cooked on edges, turn and cook on other side.
  4. Serve with butter and maple syrup.

  • You will also need: mixing bowls, frying pan or griddle, spatula
