Ingredients

  • 500 gms potato boiled (weighed before being boiled, 1.1 lbs
  • 1 egg
  • 1 tbsp butter
  • 5 tbsp parmigiano reggiano finely grated
  • 1 pinch nutmeg
  • 50 gms mortadella thinly sliced, 1.75 oz
  • 70 gms cheese thinly sliced (provolone, fontal or mozzarella or a mix of those, 2.5 oz
  • salt to taste
  • butter plus ½ tbsp butter for the top of the pie, to coat the pan
  • breadcrumbs plus ½ tbsp butter for the top of the pie, to coat the pan
