These beef tips and rice are total comfort food! The beef tips are melt in your mouth tender and so hearty. The peppers and onions add so much flavor. This one pot recipe is incredibly tasty and even better as leftovers!

Ingredients

  • 2 pounds beef tips cut into 1 inch cubes
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion finely diced
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 2 ½ cups beef broth
  • 2 tbsp Coconut aminos 
  • 2 tbsp tapioca flour or cornstarch
  • 2 cups rice white or brown

Instructions

  1. First, season the beef tips with sea salt, pepper, garlic powder, and onion powder.
  2. In a large skillet, add the olive oil over medium heat. Once the oil is hot, add the seasoned beef to the skillet. Brown on all sides. Then, remove the beef tips to a plate.
  3. Next, add the butter to the pan. Once the butter has melted, add in the peppers and onions. Cook for 5 minutes, stirring occasionally to prevent burning.
  4. Add in the beef broth and coconut aminos. Add in the beef tips to the pan. Bring the mixture up to a boil. Once boiling, reduce heat to a simmer and place a lid on the pan.
  5. Simmer over low heat for 1 to 2 hours, or until the beef is very tender. Meanwhile, prepare the brown rice according to package directions.
  6. Once the beef is done, make the slurry. Remove about ¼ cup of the liquid from the pot and place in a bowl. Stir in the tapioca flour. Once mixed, pour this mixture back into the pot.
  7. Continue stirring over low heat until the gravy has thickened.
  8. To serve, add the cooked brown rice to a plate or bowl. Add the beef tips, veggies, and gravy on top!

Notes

  • For the beef tips, use sirloin or top sirloin.  Stew meat can also be used.
  • Coconut aminos is the soy free and gluten free version of soy sauce.  Feel free to use gluten free soy sauce if desired.
  • Allow the mixture to simmer until the beef is very tender.
  • Tapioca flour functions the same as cornstarch.  This helps thicken the gravy.
  • Store the leftovers in the fridge for up to 4 days.
  • To reheat, add the leftovers to a skillet over low heat.  Heat until warm.
