Ingredients

  • 75-100 grams sweet onion
  • 1 clove garlic
  • ¼ cup granulated sugar
  • ¼ cup white wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ cup neutral oil vegetable, canola, or grapeseed
  • salt to taste
  • ½ Tablespoon poppy seeds

Instructions

  1. Add onion, garlic, sugar, vinegar, and dijon mustard to a blender and puree until combined.
  2. Add oil and continue blending until combined. Taste test and add salt, usually about 1/8 to 1/4 teaspoon fine sea salt is great!
  3. Strain the onion pulp through a fine mesh sieve on top of a bowl or measuring cup. Discard the pulp and stir the poppy seeds into the smooth dressing. Enjoy on a salad or store in the fridge for later use.
