Ingredients
- ½ cup cold butter
- ½ cup light brown sugar tightly packed
- ¼ cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 ½ cups flour gluten free 1 to 1 or all purpose
- ½ tsp baking soda
- ½ tsp baking powder
- ⅓ cup white chocolate chips
- ⅓ cup chocolate chips
- 10 Oreos gluten free or regular
- Blue Food coloring
Instructions
- First, preheat oven to 375 degrees Fahrenheit. Line a baking pan with parchment paper.
- In the bowl of a stand mixer, add cold butter, brown sugar and granulated sugar. Beat for 2 to 3 minutes or until no clumps of butter remain.
- Then, add in egg and vanilla. Stir to combine.
- Add in flour, baking soda and baking powder. Stir until a thick dough is formed. Add in 4 to 5 drops of food coloring. Mix until dough is uniformly blue.
- Fold in white chocolate chips and chocolate chips.
- Scoop out balls of dough. Place on lined sheet and flatten with hands.
- Then, place an Oreo in the middle of each flattened dough ball.
- Place another small flattened ball of dough on top of the Oreo. Use hands to fully enclose Oreo with cookie dough.
- Bake for 9 to 10 minutes or until the cookies look barely set.
- Finally, remove from oven. Allow cookies to cool on pan for 5 minutes. Then carefully remove to a wire rack.
