These dairy free brownies are gooey, rich and decadent. This quick and easy recipe tastes like classic fudge brownies, but they are made without dairy. They are great for holidays, birthdays, Christmas and dessert!

Ingredients
- ½ cup melted coconut oil
- 1 cup dairy free chocolate chips
- 1 cup light brown sugar lightly packed
- 2 eggs
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- ¼ cup tapioca flour or cornstarch
- ¼ cup dairy free chocolate chips optional
Instructions
- First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch square pan with parchment paper.
- Add melted coconut oil and 1 cup chocolate chips to a bowl. Stir until chocolate chips have completely melted.
- In the bowl of a stand mixer, add light brown sugar and eggs. Beat for 2 to 3 minutes or until light and frothy.
- Then, pour melted chocolate mixture into bowl. Stir to combine.
- Add in cocoa powder, vanilla extract and tapioca flour. Stir to combine.
- Then, stir in extra chocolate chips if desired.
- Pour batter into lined baking pan.
- Bake for 20 to 24 minutes or until the middle of the brownies is barely set.
- Finally, remove from oven. Allow brownies to cool fully before slicing.

Notes
- Stir melted coconut oil and chocolate chips until fully smooth and creamy. If needed, microwave for a few seconds to fully melt together.
- Lightly pack brown sugar. Coconut sugar can be used if needed.
- Beat light brown sugar and eggs for 2 to 3 minutes. The mixture should look frothy.
- The brownie batter will look slightly thicker than boxed brownies.
- For extra gooey brownies, bake only 20 minutes.
- Allow brownies to fully cool before slicing into. They are gooey!
