Ingredients

  • 1 Tablespoon Dijon mustard
  • 2 Tablespoons apple cider vinegar
  • 1 Tablespoon honey maple syrup or agave for vegan
  • ¼ cup extra-virgin olive oil
  • salt to taste (scant ½ teaspoon)
  • ⅛-¼ teaspoon freshly ground black pepper

Instructions

  1. Whisk together all ingredients except for the oil; then, while whisking, drizzle in the oil until combined. Alternatively, add all the ingredients to a jar and shake really well until emulsified. Be sure to taste test for salt levels, and enjoy!
  2. Toss on a salad immediately before serving. Store leftover dressing in an airtight container in the fridge for up to 1 week.

Notes

  • Serving Size: will depend on how much you use per salad, the recipe makes around 8 tablespoons total (1/2 cup).
