- 3 Tablespoons unsalted butter
 - 6 cloves garlic minced
 - 1 Tablespoon Italian seasoning
 - kosher salt to taste
 - freshly ground black pepper to taste
 - Pinch red pepper flakes
 - 3 Tablespoons all-purpose flour
 - 2 cups vegetable stock room temperature or lukewarm
 - 1 cup half and half room temperature or lukewarm
 - 6 ounces Parmesan Cheese grated or finely shredded
 
Instructions
- Melt butter in a large skillet over medium heat. Add garlic and Italian seasoning, along with salt, pepper, and a pinch of red pepper flakes, if using. Whisk frequently for 1 minute until fragrant, lowering heat if needed, to keep the garlic from burning.
 - Whisk in flour and cook for 1 minute. Slowly whisk in vegetable stock until fully incorporated. Bring to a simmer and cook, whisking somewhat frequently, for 2-3 minutes until it thickens. The sauce should coat the back of a spoon.
 - Reduce heat and whisk in cream until combined, then whisk in parmesan cheese in batches until fully incorporated and melted. Taste test and add salt if needed.
 - Use immediately or transfer to a jar for storage. Store leftovers in an airtight container in the fridge for 3-4 days.
