  • 3 Tablespoons unsalted butter
  • 6 cloves garlic minced
  • 1 Tablespoon Italian seasoning
  • kosher salt to taste
  • freshly ground black pepper to taste
  • Pinch red pepper flakes
  • 3 Tablespoons all-purpose flour
  • 2 cups vegetable stock room temperature or lukewarm
  • 1 cup half and half room temperature or lukewarm
  • 6 ounces Parmesan Cheese grated or finely shredded

Instructions

  1. Melt butter in a large skillet over medium heat. Add garlic and Italian seasoning, along with salt, pepper, and a pinch of red pepper flakes, if using. Whisk frequently for 1 minute until fragrant, lowering heat if needed, to keep the garlic from burning.
  2. Whisk in flour and cook for 1 minute. Slowly whisk in vegetable stock until fully incorporated. Bring to a simmer and cook, whisking somewhat frequently, for 2-3 minutes until it thickens. The sauce should coat the back of a spoon.
  3. Reduce heat and whisk in cream until combined, then whisk in parmesan cheese in batches until fully incorporated and melted. Taste test and add salt if needed.
  4. Use immediately or transfer to a jar for storage. Store leftovers in an airtight container in the fridge for 3-4 days.
