Ingredients

  • 1 ½ 1 ½ pounds Yukon gold potatoes
  • 1 1 pound whole carrots
  • 2 2 Tablespoons extra virgin olive oil
  • kosher salt to taste
  • freshly ground black pepper to taste
  • chimichurri sauce for serving, optional

Instructions

  1. Preheat the oven to 425°F.
  2. Dice the potatoes and slice the carrots equally in size. I like to half the potatoes and then, depending on their size cut them into another half or fourths. Cut the carrots on the bias.
  3. Place the diced veggies on a half-sheet pan and drizzle with olive oil, salt, and pepper. Toss to coat evenly.
  4. Bake for 25-30 minutes, then flip the veggies with a sturdy stainless steel spatula. Bake for another 10-15 minutes, as needed, until the veggies are caramelized and fork-tender.
  5. Serve with chimichurri sauce or another sauce as desired. Store any leftovers in an airtight container for 4-5 days; reheat in the microwave, oven, or air fryer. Enjoy!
