These homemade strawberry brownies are rich, sweet, bright, and delicious! They are filled with plenty of real strawberry flavor. The pink strawberry glaze is the perfect topping!

Ingredients

Strawberry Brownies
  • 1 ⅓ cups white chocolate chips melted
  • ¾ cup unsalted butter melted
  • 2 eggs
  • 1 egg yolk
  • 1 ¼ cups granulated sugar
  • 2 tsp vanilla extract
  • 1 ¼ cups flour all purpose or gluten free
  • pinch sea salt
  • 2 cups freeze dried strawberries
Strawberry Glaze
  • 1 cup powdered sugar
  • 1 tbsp milk
  • 3 tbsp freeze dried strawberries

Instructions

  1. First, preheat the oven to 350 degrees Fahrenheit. Line a 9-inch square pan with parchment paper.
  2. In a large mixing bowl, stir together the melted butter and melted white chocolate.
  3. Add in the eggs, egg yolk, sugar, and vanilla. Stir vigorously until light and frothy.
  4. Add the freeze dried strawberries to a food processor. Process until finely ground. Fold in the flour, salt, and ground freeze dried strawberries. Stir together.
  5. Transfer this batter to the lined pan. Bake for 25 to 27 minutes or until a toothpick inserted comes out with only moist crumbs.
  6. Once the brownies have fully cooled, make the glaze. Process the freeze dried strawberries until finely ground. Combine the powdered sugar, milk, and ground freeze dried strawberries in a small bowl. If needed, add another drop of milk to achieve a creamy consistency.
  7. Finally, spread the glaze on top of the brownies. Slice and serve!

Notes

  • kitchen favorites
  • Use high quality white chocolate that melts well.
  • Both regular all purpose flour and gluten free flour work well.
  • Do not replace the freeze dried strawberries with fresh strawberries.
  • Finely ground freeze dried strawberries are vital to this recipe.
  • To make the glaze thinner, add more milk.  To make the glaze thicker, add more powdered sugar.
  • Store in the fridge for up to 4 days.
