Ingredients

Shortbread Crust
  • 2 ¾ cups gluten free flour
  • 1 cup melted unsalted butter
  • ½ tsp baking powder
  • ½ cup pure maple syrup
  • 1 tsp vanilla extract
Filling
  • 3 cups fresh strawberries or blueberries and raspberries
  • 3 tbsp tapioca flour
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tbsp pure maple syrup

Instructions

    Cup of Yum
  1. First, set your oven to 375 degrees Fahrenheit to heat up. Then, cover a 9-inch square pan with parchment paper.
  2. Start by making the shortbread crust. Mix all the crust ingredients in a bowl. Stir until the mixture looks like cookie dough.
  3. Press ¾ of this mixture evenly into the lined pan. Save the remaining ¼ for the topping. Use a fork to poke holes in the crust.
  4. Bake the crust for 8 minutes. Then, take it out of the oven.
  5. In a clean bowl, mix all the filling ingredients. For a smoother texture, mash the berries. Stir until everything is well combined.
  6. Pour the fruit mixture into the pan. Spread it out into an even layer.
  7. Sprinkle the remaining crust mixture on top of the fruit.
  8. Bake for 32 to 36 minutes, or until the topping is lightly golden brown and the filling is bubbly around the edges.
  9. Take it out of the oven. Let it cool in the pan for 1 hour, then carefully move it to a wire rack to cool completely.
  10. Finally, once completely cooled, cut into bars and enjoy!
