Ingredients

  • 1 ½ 1 ½ cups corn-on-the-cob kernels approx. 2 ears
  • 1 ½ 1 ½ Tablespoons red onion finely diced
  • 2 2 garlic cloves finely chopped
  • 1 ½ 1 ½ Tablespoons Jalapeño finely chopped
  • ¾ ¾ cup tomato diced, approx. 1 medium tomato
  • ½ ½ teaspoon salt to taste
  • 3 3 Tablespoons cilantro chopped
  • ½ ½ lime juiced, to taste

  1. Preheat grill to medium-high heat. Husk the corn on the cob, then place on clean grill grates and cook for a few minutes on each side, rotating until charred and soft all around.
  2. Let the corn cool slightly while you prepare the remaining ingredients. Add the rest of the ingredients to a medium bowl. Once the corn is cool, cut off the kernels and toss in the bowl until combined.
  3. Taste test and add additional salt or lime juice as needed. Serve with chips or as a side dish (or even on top of tacos, etc.).
