Ginger Garlic Soup with Noodles

This healing ginger garlic soup is completely vegetarian. Perfect soup for a healthy detox, or to help you heal from a winter cold.

Ingredients

  • 3 oz broad egg noodles or substitute a vegan noodle, No Yolks brand
  • 32 oz vegetable broth
  • 6 cloves garlic peeled and minced
  • 1 piece ginger 2" piece, peeled and minced, fresh
  • 1 tsp salt
  • ¼ tsp black pepper
  • 1 tsp olive oil

Instructions

    Cup of Yum
  1. Heat olive oil over medium heat in a large soup pot. 
  2. Add ginger and garlic, and cook for 2-3 minutes until fragrant.
  3. Add vegetable broth, salt, and pepper. Bring to a boil. 
  4. Add No Yolks Noodles and cook for ten minutes. 
  5. Remove from heat, and serve!

Notes

  • This recipe can be made vegan by using your favorite vegan-friendly noodles.
