Ginger mojito
This twist on the classic cocktail is easy to make and with a wonderful flavor kick!

Ingredients
- 6 mint leaves plus sprig to garnish
- ¾ fl oz ginger syrup
- ¾ fl oz fresh lime juice
- 1 ½ fl oz white rum
- 1 ½ fl oz soda water to top up glass, or more/less to taste
Instructions
- Put the mint leaves, ginger syrup, lime and rum in a cocktail shaker or glass and muddle them together so the mint leaves break up a bit. Add a couple cubes of ice and shake to cool the mixture.
- Strain the mixture into a highball (tall) glass filled with a few ice cubes. Top up the glass with soda water and serve, garnished with a sprig of mint (and lime and a slice of ginger, if you like)

Notes
- If you want to make a larger quantity, you can muddle more mint leaves with more of the other ingredients, apart from the soda water, keeping all of the proportions the same. You can make this mix ahead of time, strain and chill until needed (rather than shaking with ice). Then divide the mixture between glasses filled with ice and top up with soda water just before serving.
- If you prefer a stronger drink, you can use more rum eg 2 fl oz/60ml.
