Ingredients
- 2 tablespoons of rice vinegar
- ½ tablespoon of sugar or agave
- 1 tablespoon finely minced fresh ginger
- 1 tablespoon of olive oil
- Juice of ½ lemon
- ¼ cup of water
- Salt and freshly ground pepper
Instructions
- In a small bowl or jar with a lid, mix all of the ingredients. Taste and adjust any ingredients to taste. The taste of the ginger in the dressing will get stronger and better the longer it sits in the refrigerator.

- Use fresh ginger: This has the best, brightest, freshest flavor over any pre-minced version.
- Taste and adjust: This dressing is a balance of sweet, tangy, salty, zingy, etc. However, taste it and adjust any ingredient to your liking.
- To adjust the consistency: For the creamiest version, blend all the ingredients, slowly adding in the oil for more of an emulsification.
- Leave it to rest: We recommend preparing this recipe for ginger salad dressing at least 30 minutes (but an hour is even better) before serving to allow the flavors to meld. They will improve and strengthen over time.
