Ginger Simple Syrup

Ingredients
- 1/2 cup honey
- 1/2 cup water
- 3 inches fresh ginger chunk
Instructions
- Peel a 3 inch chunk of ginger and add to a pot on the stove.
- Add 1/2 cup of honey and 1/2 cup of water to the pot.
- Bring to a boil.
- Remove from stove, strain and place in an airtight container in the fridge to cool.

Notes
- If you want a stronger ginger flavor, leave the chunk of ginger in the airtight container in the fridge overnight instead of removing it and then remove in the morning.
- You can also sub in sugar instead of honey if desired (although it doesn't work quite as well).
