GINGER SWEET POTATO COCONUT MILK STEW WITH LENTILS AND KALE

Ingredients
- olive oil
- onion medium, diced
- garlic minced
- fresh ginger 1 tablespoon, grated
- sweet potato medium, peeled and diced
- red lentils rinsed
- vegetable broth 4 cups
- coconut milk 14 oz can
- ground turmeric
- ground cumin
- paprika
- salt to taste
- black pepper to taste
- kale stems removed, leaves chopped
- lime juice, optional, for garnish
Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in garlic and ginger, cooking for 1-2 minutes until fragrant.
