Gingerbread Men

Ingredients

  • 1/2 cup unsalted butter , softened
  • 3/4 cup dark brown sugar , packed
  • 1/3 cup molasses
  • 1 large egg
  • 3 tablespoons water
  • 2 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice

Instructions

  1. In your stand mixer, add the butter and brown sugar and on medium speed, cream until light and fluffy.
  2. Add in molasses, egg and water until it makes a smooth mixture.
  3. In another bowl, sift together the flour, baking soda, salt, ginger, nutmeg, cinnamon and allspice
  4. On the lowest speed setting add the flour mixture to the stand mixer until just combined.
  5. Divide dough in half and wrap each half tightly with plastic wrap.
  6. Refrigerate for at least 1 hour.
  7. Preheat oven to 350 degrees and line baking sheets with parchment paper.
  8. Flour a smooth surface and your rolling pin and roll each portion of dough to about 1/8 - 1/4" thick.
  9. Press cookies out with gingerbread men cookie cutters or any other shape you'd like to use.
  10. Place the cookies 1" apart on the baking sheet (these cookies should not spread very much).
  11. Bake for 8-10 minutes, your don't want the edges to brown.
  12. Cool for 5 minutes before removing from baking sheet to cool completely before frosting.
