Glazed Chocolate Munchkins (Donut Holes)

Glazed Chocolate Munchkins are bite-sized fried dough balls made from a cocoa-flavored dough enriched with melted baker's chocolate and buttermilk. After frying to a puffed, cooked finish, they are dipped in a vanilla-scented confectioner's sugar glaze, resulting in soft, chocolatey treats with a sweet glaze coating.

Description

This recipe combines flour, granulated sugar, cocoa powder, baking powder, soda, and salt with melted butter and unsweetened baker's chocolate mixed into buttermilk and vanilla. The addition of an egg binds the dough before a resting period in the refrigerator firms the dough for rolling. The dough is then shaped into small balls and fried in hot oil at 350°F until puffed and cooked through, typically 2-4 minutes per batch.

Once fried, the munchkins are drained on paper towels to remove excess oil. They are then coated with a glaze made from confectioners sugar, milk, and vanilla, which creates a sweet and smooth exterior glaze that complements the chocolate dough inside. The frying method yields a soft interior with a delicate outer crispness beneath the glaze.

Ingredients

Servings
  • all-purpose flour 1 cup
  • 1/4 cup granulated sugar
  • 1/4 cup cocoa powder dutch-process, 2 tablespoons
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 tablespoon butter salted
  • 1 1/2 oz baker's chocolate unsweetened
  • 1/4 cup buttermilk https://www.servedfromscratch.com/5-minute-homemade-buttermilk/
  • 1 tablespoon vanilla extract
  • 1 egg whisked, large

Glaze

  • 2 cups confectioners sugar
  • 2 tablespoons milk
  • 2 teaspoons vanilla extract
  • water if needed

Instructions

  1. In a double boiler, melt butter and baker's chocolate. Remove from heat.
  2. In a large bowl, whisk flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Add buttermilk and vanilla to melted chocolate. Add whisked egg.
  4. Add wet ingredients to dry and mix until combined. With your hands, mix until dough is all well combined and form into a ball. Wrap in plastic and cool in fridge for 30 minutes.
  5. Once cooled, roll dough into 1 -2 tablespoon balls.
  6. Heat a deep skillet or sauce pan with 3 inches of vegetable oil until oil reaches 350 degrees (candy thermometers or digital infrared thermometer). Add 4 - 5 balls into the oil and fry until cooked (they'll looked a little puffed), approximately 2-4 minutes. With a slotted spoon, remove from oil and place on paper towel lined plate. Finish with all balls.
  7. Line baking sheet with parchment paper and rack.

Prepare the Glaze

  1. In a medium sized bowl, whisk confectioner's sugar, milk and vanilla until the consistency of heavy cream. If needed, add a little water and mix to reach that consistency.
  2. Dip each donut hole in the glaze. With a fork, remove and shake off excess glaze. Transfer donuts to rack until all donut holes are glazed. Let rest until glaze is set.
  3. Enjoy!
  4. Store in an airtight container for up to a week.
