Gluten Free Apple Crisp

Ingredients

  • 8 apples (cored and thinly sliced)
  • 2 teaspoons cinnamon (divided)
  • 2 cups Gluten Free Oats
  • ½ cup almond meal or flour
  • ½ cup chopped walnuts
  • ⅓ cup pure maple syrup
  • ¼ cup extra virgin olive oil
  • ½ teaspoon nutmeg
  • ½ teaspoon salt
  • ¼ teaspoon ground ginger
  • vanilla ice cream (to serve, optional )

Instructions

  1. Pre-heat oven to 350 degrees.
  2. In a medium bowl, toss apples with half of the apples (1 teaspoon cinnamon.) Place cinnamon-scented apples in the bottom of a 9″ x 13″ baking dish.
  3. In a medium bowl, toss together all remaining ingredients: oats through ground ginger. Spread oat mixture evenly on top of apples.
  4. Bake until oat topping is golden brown and apples are warm and bubbly, about 45 minutes. Serve with a scoop of vanilla ice cream if you wish.
