Ingredients

Crumble Topping:
  • ½ cup salted butter melted
  • ¾ cup coconut sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ⅓ cup Chopped Pecans
  • 1 cup gluten free flour
Filling:
  • 6-7 cups Granny Smith apples peeled and sliced small
  • 3 Tablespoons salted butter melted
  • ½ cup coconut sugar
  • ½ teaspoon ground cinnamon
  • 1 Tablespoon lemon juice
  • 2 Tablespoon cornstarch
  • ½ teaspoon salt
  • 1 Tablespoon vanilla extract
FOR SERVING:
  • vanilla protein ice cream optional

Instructions

  1. Preheat oven to 375°F. Grease an 8x8-inch baking dish and set aside.
  2. Combine the melted butter, brown sugar, cinnamon, salt, nutmeg, baking powder, pecans, and flour in a small bowl. The mixture should be crumbly. Set the mixture aside.
  3. Combine the apples, butter, brown sugar, cinnamon, lemon juice, cornstarch, salt, and vanilla in a medium bowl.
  4. Pour the apple mixture into the prepared baking dish and top with the crumble mixture, covering all of the apple mixture.
  5. Bake in the preheated oven for 25 minutes.
  6. Remove the crumble from the oven and let cool for 10 minutes.
  7. Serve with ice cream or whipped cream. Enjoy!
