Gluten Free Fresh Peach Pie

This fresh peach pie recipe is made with an easy gluten free pie crust and filled with sweet cinnamon sugar peaches for a scrumptious gluten free dessert!

Ingredients

  • 2 cups Nature’s Path Sunrise Crunchy Vanilla Cereal
  • ¼ cup white sugar
  • 5 tbsp butter melted
  • 6 peaches peeled, pitted & sliced
  • 2 tbsp cornstarch
  • ½ tsp ground ginger
  • ½ tsp ground cinnamon
  • ¼ cup white sugar
  • ½ cup brown sugar
  • ¼ cup water

Instructions

  1. Add the cereal to a food processor.
  2. Blend until a fine crumb mixture forms.
  3. Add the sugar and melted butter and blend 5-10 seconds.
  4. Press the crumb mixture into a 9 inch pie plate.
  5. Place in the refrigerator.
  6. Add the peaches to a large skillet over medium heat.
  7. Add the cornstarch, ginger, cinnamon, white and brown sugar.
  8. Pour the water over the top.
  9. Toss everything together and allow to cook 2-3 minutes.
  10. Reduce the heat to low, cover and simmer 15-20 minutes or until peaches are tender.
  11. Pour the peaches into the pie crust and place back in the refrigerator for 30 minutes to chill.
