Ingredients

  • 1 cup 1 to 1 gluten free baking flour
  • 1 cup yellow cornmeal
  • ½ cup white sugar
  • 1 teaspoon salt
  • 3 teaspoons baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1/2 cup shredded cheddar cheese
  • 1 fresh jalapeno seeded and chopped

Instructions

  1. Preheat oven to 400 degrees F.
  2. Spray 9×9 baking pan with non stick cooking spray or line with parchment paper.
  3. Mix together all ingredients into a bowl by hand. Stir well.
  4. Pour into your prepared pan and baked for 20 to 25 minutes.
  5. Allow to cool completely at room temperature and then cut.

Notes

  • Store leftovers in an air tight container for 5-7 days.
