Gluten-Free Pizza Bites

These quick and easy snacks have all the pizza taste in a lighter, mini version.

Ingredients

  • 3 Roma tomatoes small
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon Italian seasoning
  • 3/4 teaspoon garlic salt
  • 1 spreadable cheese about 5.5 ounces, at room temp, soft
  • 16 gluten-free crackers large, of choice
  • basil optional, for garnish, fresh

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Cut each tomato into slices about 1/3-inch thick and place on the baking sheet. Rub the tops with the olive oil.
  3. In a small bowl, stir together the Italian seasoning and garlic salt. Sprinkle evenly over the tomatoes.
  4. Bake until the tomatoes are tender but not falling apart, about 12-13 minutes.
  5. Place the cheese in a medium bowl and lightly whip with a fork.
  6. Spread the whipped cheese over the crackers, top each with a tomato slice and garnish with basil.
  7. Serve immediately.
