Ingredients
- 2 cups almond meal
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 teaspoon baking powder
- ½ teaspoon garlic powder
- ½ teaspoon dried rosemary
- 1 egg, beaten
- 12 oz cheddar cheese
- 1 lb pastured pork sausage
Instructions
- Add all ingredients in a large mixing bowl. Using your hand mix all ingredients until mixture comes together.
- Preheat oven to 350 F. Line a baking sheet with parchment paper.
- Roll the mixture into 36 1-inch balls and place on prepared baking sheet. Bake for about 25 minutes until golden brown, turning them halfway through. Cool for 5 minutes and serve.

Notes
- You can mix the sausage quickly using a hand mixer, or by hand. All of the ingredients should be well combined.
- I prefer to oven cook these sausage balls, but you can also fry them in a little oil on the stovetop if you prefer.
