Ingredients
- 1 cup gf oat flour
- 1 apple
- ¼ cup raisins and a little more
- 2 tablespoons maple syrup
- 2 teaspoons baking powder (corn + aluminum free)
- 2 teaspoons cinnamon powder
- 1 tsp ginger powder
- celtic sea salt to taste
Instructions
- Preheat the oven to 360 F or 180C. Prepare 2 cupcake cups or a tin (or both).
- Mix the flour with the baking powder, cinnamon and ginger. And salt if you use it.
- Grate 3/4 apple above the flour (you need the moist as well). The grated apple will fill approximately ½ a cup.
- Mash a bit if needed with a fork and mix through the flour, together with the maple syrup. It will form a thick batter, more like a paste or wet dough.
- Dice the remaining apple. Add with the raisins en mix.
- Spoon the batter into the baking cups. Use a silicon spatula to scrape the bowl if needed. If you like it, sprinkle some extra raisins on top, those will get nice crispy and caramelized.
- Place in the oven for 35 minutes.
Cup of Yum
Notes
- I usually use both paper baking cups and a tin and place the cups in a tin. That way the cups are stable when filling them and they are easy to handle.
