Ingredients
- [25-30 pieces of sweet potato gnocchi]
- 3/4 pound Italian sausage
- 14 1/2 ounce can diced tomatoes
- 1 teaspoon Italian seasoning
- 1/4 cup heavy cream optional - see notes
- salt and pepper to taste
Instructions
- In a large skillet cook Italian sausage over medium high heat break up the sausage with a mixing spoon and cook until the meat is no longer pink. Drain any excess oil.
- Mix in the diced tomatoes and Italian seasoning. Gently fold in gnocchi and let ingredients heat for another 5 minutes. Serve immediately.

Notes
- For a tasty variation, if the tomatoes have a lot of liquid add 1/4 cup of cream for a light rose colored sauce.
