Gnocchi with Sausage and Tomatoes

Ingredients

  • [25-30 pieces of sweet potato gnocchi]
  • 3/4 pound Italian sausage
  • 14 1/2 ounce can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/4 cup heavy cream optional - see notes
  • salt and pepper to taste

Instructions

  1. In a large skillet cook Italian sausage over medium high heat break up the sausage with a mixing spoon and cook until the meat is no longer pink. Drain any excess oil.
  2. Mix in the diced tomatoes and Italian seasoning. Gently fold in gnocchi and let ingredients heat for another 5 minutes. Serve immediately.

Notes

  • For a tasty variation, if the tomatoes have a lot of liquid add 1/4 cup of cream for a light rose colored sauce.
