Goat Cheese Crostini with Balsamic Grape Tomatoes

Ingredients

  • 2 tbsp. olive oil
  • 1 pint grape tomatoes
  • 2 garlic cloves minced
  • 1 tsp. balsamic vinegar
  • salt & pepper to taste
  • 4-5 oz. plain goat cheese
  • Sliced bread baguette or French bread

Instructions

  1. Add olive oil and tomatoes to a skillet and sauté over medium heat for about 20-22 minutes, stirring occasionally. When the tomatoes start to pop and break down, add the garlic and balsamic vinegar. Cook for a couple minutes, until the garlic has softened. Season with salt and pepper to taste.
  2. If using untoasted bread, spread goat cheese on each crostini and top with some of the balsamic tomato mixture. I like to crack some fresh pepper on top. Enjoy!
  3. If using toasted bread, add your bread slices to a broiler and broil for a minute or two, watching that it doesn't burn. Spread goat cheese on each crostini and top with some of the balsamic tomato mixture. I like to crack some fresh pepper on top. Enjoy!
