Goat Cheese Stuffed Mini Peppers

Goat cheese stuffed mini peppers are a delicious and easy-to-make appetizer or snack. The halved and hollowed center is filled with creamy goat cheese mixed with simple spices and herbs.

Ingredients

  • 6 mini peppers sliced in half lengthwise and deseeded
  • 8 ounce goat cheese
  • ¼ cup sour cream
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon thyme
  • salt and pepper to taste
  • 2 Tablespoon chopped chives

Instructions

  1. Place the mini peppers onto a serving tray or plate.
  2. Add the goat cheese, sour cream, onion powder, garlic powder, thyme and salt and pepper to taste to a food processor. Pulse until the mixture is smooth and creamy.
  3. Put the filling into a piping bag with a tip or Ziploc bag and pipe into the mini peppers.
  4. Garnish with chopped chives before serving.
