A toasted English Muffin topped with Smoked Salmon, crumbled goats cheese and fresh arugula, finished off with garlic olive oil to make a light quick snack, lunch, or appetiser!

Ingredients

  • 2 oz smoked salmon 2 slices halved
  • 2 tablespoons goats cheese
  • 1 teaspoon garlic olive oil divided
  • 1 English Muffin haves and toasted
  • 1 handful fresh rocket leaves/arugula

  1. Build english muffin with smoked salmon, crumbled goats cheese, rocket leaves/arugula and drizzle with the oil.

Notes

  • If you want to add a creamy element try avocado spread on the muffin or cream cheese with dill!
