Grandma's Potato Salad
Grandma's Potato Salad is a recipe straight from my beautiful Grandma! It's an easy side dish that is perfect for entertaining!

Ingredients
- 5 lbs. Russet potatoes peeled and chopped into 1 inch pieces
- 1 cup chopped onion
- 3 stalks celery chopped
- 8 eggs hard boiled, chopped
- 2 cups mayo
- ¾ cup pickle juice
- 1 tsp salt or to taste
- 1 tsp pepper or to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- parsley chopped (optional)
Instructions
- place potatoes into large pot and cover with cold water
- place over medium high heat and bring to a boil
- cook until fork tender, then drain
- place back into the pot and allow to cool
- in a big serving bowl whisk together mayo, pickle juice, salt, pepper, garlic powder, and onion powder
- add potatoes, chopped onion, celery, eggs, and parsley if using into the serving bowl and gently toss to cover with mayo
- cover and refrigerate until ready to serve!
