Granola Cups with Yogurt and Fresh Fruit

Ingredients

  • 1 ripe banana, mashed well
  • ¼ cup honey
  • 1 tsp vanilla
  • pinch of salt
  • 1 ½ cups rolled oats
  • vanilla Greek Yogurt
  • Strawberries, blueberries, raspberries and kiwi *Use whatever fruit you want and mini chocolate chips and coconut are tasty additions too.

  1. Preheat the oven to 350 degrees. Coat 6 spots in a muffin tin very well with cooking spray.
  2. In a medium bowl, mash the ripe banana very well. Add the honey, vanilla, cinnamon, and salt; mix well. Add the oats and stir until thoroughly combined. 
  3. Press 2 tablespoons of mix into the six spots of the prepared muffin tin. Gently push the mix evenly up the sides and in the bottom to form a cup. 
  4. Place into the oven and bake for 30 minutes.
  5. Remove from the oven and cool for 5 minutes before removing them from the pan and placing them on an iron rack to finish cooling completely.
  6. Once the granola cups have cooled, add a spoonful of vanilla Greek yogurt to the center then top with fresh strawberries, blueberries, raspberries, and kiwi. Serve immediately. Enjoy.
